This delicious Instant Pot cauliflower soup is a great option to warm up your day. It's all made in just one pot, and it's ready in just 20 minutes. It's creamy, delicious, and so easy to make!

I love how soups are simple to make and packed with so much flavor and nutrients. Cauliflower, for example, is a great source of vitamin C, K, and fiber, according to Webmed.

So be ready because this delicious Instant Pot cauliflower soup will soon become a family favorite.

Ingredients and substitutions

  • Cauliflower head - Cut into small florets.
  • Bacon - If you are trying to cut down on calories, you can leave the bacon out and use olive oil, but I really think that the flavor it brings is worth the calories.
  • Chicken broth - Use a flavorful one. Vegetable broth is also good.
  • Cream cheese- It helps with the creaminess and flavor. A reduced-fat version is also possible.
  • Onion - I like using a red onion, but you can use any variety that you want.
  • Garlic - Fresh is always better, but from a jar is also okay.
  • Vinegar - It's my secret ingredient that brightens and brings out the flavors in this soup. The bacon and the vinegar together bring such a nice touch to this soup.

Making cauliflower soup in an Instant Pot is very easy. Here is the step-by-step with some photos to guide you.

What to serve with cauliflower soup

You can serve cauliflower soup with some delicious bread or even a salad.

For the toppings, here are some ideas:

  • Shredded cheese
  • Sour cream

How to make it low-calorie

The normal recipe contains 308 calories, mostly because of the bacon fat and cream cheese.

If you are worried about calories, you can lower them in this recipe. You could substitute the bacon fat for olive oil and use the reduced-fat cream cheese.

These changes will drop the calories to 154. If you go with the fat-free cream cheese version, you drop it to 102 calories.

Be aware, though, that fat always plays a big role in flavoring food. If you make changes like this, you will get a nice cauliflower soup, but not as flavorful as it could be.

Can I make this soup in a regular pan?

Yes, it is possible to make this soup in a regular pan. It'll just take a little longer. Cook it for about 15 minutes or until tender.

For how long can I store it?

You can store it in the fridge, in a closed glass container, for about 3-4 days.

Can it be frozen?

This soup can be frozen for up to 3 months. Just be aware that because of the cream cheese and vinegar, there is a chance the soup will curdle. So, as you reheat it, use the low heat. If it curdles anyway, just blend it again.

How to make it super smooth?

I like using the immersion blender because it's convenient and easy to clean, but, if you want a super-smooth texture, you should use a standard blender.

Ingredients

  • 5 oz sliced bacon (150 grams)
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3 cups chicken broth
  • 2 lbs medium head cauliflower (1kg) cut into florets
  • 8 oz cream cheese (225 g)
  • 1 teaspoon salt (or to taste)
  • 1½ teaspoon rice vinegar (or white vinegar)

Instructions

  • Press the sauté button on the Instant Pot and wait for the pan to get hot. Add the bacon slices and fry them in their fat until golden and crispy. Remove the slices to serve them as a topping. Keep 3 tablespoons of the fat in the pan.
  • Add onion and garlic and sauté until onion gets translucent.
  • Add broth, cauliflower florets, cream cheese, and salt. Cancel sauté mode and press the pressure cook or manual button (depending on your model), adjusting the pressure to High and the time to 5 minutes.
  • Once the time is up, release the pressure manually. Remove the lid and blend all ingredients with an immersion blender or a standard blender.
  • Add the vinegar, correct salt, and serve it hot with your favorite toppings.

Notes

To make this soup in a regular pan, cook it for about 15 minutes or until cauliflower is tender.
If you like the soup super smooth, use a standard blender.
