This amazing summer salad can be a light meal or a stunning side. It's packed with a combination of Juicy peaches, blueberries, cucumbers, creamy feta cheese, and sweet cashews, all in a fresh bed of mixed greens and topped with a delicious mango dressing.
5ozSpring mix salad blend (baby lettuce and baby greens)140 grams
1big ripe peachsliced
½cupblueberries100 grams
½cuphoney roasted cashews80 grams
⅓of a medium cucumbersliced
2tablespoonsfeta cheese
For the dressing
1large mango(about 1½ cup cubed mango)
⅓cupwater
¼cupavocado oil
¼cuporange juice
3tablespoonsfreshly squeezed lime juice
1tablespoonrice vinegar(can be subbed for lime juice)
1garlic clove
½small shallot(about 1½ inch piece)
1-2tablespoonshoney or agave nectar(depending on the sweetness of the mango)
½teaspoon salt
red pepper flakes, to taste
Instructions
For the salad
Place the mixed leaves in a bowl and drizzle with the dressing. Toss it to coat all leaves evenly.
Then add peach slices, blueberries, cucumber, nuts, and feta. Drizzle some extra dressing on top. Enjoy!
For the dressing
Combine all the ingredients but the red pepper flakes in a personal blender, immersion blender, or food processor until completely smooth and homogeneous. Add pepper flakes to taste, mix and try. Adjust any ingredients according to your preference.
