    Frozen Yogurt Bark with fruits

    Yogurt Bark is the perfect healthy snack, specially for hot days. Loaded with protein, fruits and whatever your imagination may come up with, frozen yogurt bark is a fun nutritious treat for kids and adults.

    Here where I live it's already 100ºF every day, and summer hasn’t even started yet… What a hot place this is!!! 😅

    That's why I've been trying to make refreshing desserts and snacks to eat when we start to get hungry during the day.

    It's so easy to buy an ice cream, full of calories, and dig in the whole day. Speaking for myself here... I love ice cream!!! And I can eat a whole gallon if you let me.

    That's when I remembered that I had Greek yogurt in the fridge. So why not freeze it and turn it into a healthy and tasty snack?

    INGREDIENTS YOU CAN USE

    This yogurt bark recipe has very simple ingredients and most of them can be replaced with no problems …

    Greek yogurt: Is a rich source of probiotics, protein, calcium, vitamin B12 and potassium, which help to maintain a healthy digestive tract, bones, skin, hair and building muscles.

    You can use Greek or regular yogurt, but Greek is the best choice since it contains less water and it's creamier. Regular yogurt and specially 0% fat yogurt will be harder and icier…I like using plain Greek yogurt and sweetening it with honey, maple or agave.

    Fruits: For this recipe I used fresh strawberries, but you can also use frozen (it is not necessary to defrost it).

    You can also use other fruits like blueberries, peach, banana, avocado, pineapple … Cut into little pieces/thin slices to make it easy to bite into.

    Jam: I used mixed berry jam, but you can use any other flavor of your choice. Try to think of one that would go well with the fruit you chose. You can also omit the jam if you prefer.

    Extra toppings: I really like granola, and I think it made the bars even more tasty and charming (click here for my delicious granola recipe), but you can use other things, like nuts, almonds, raisins, cranberries, pistachios , chocolate chips, dried fruits …

    How to Make Greek Yogurt Bark

    Making this bark is very simple. Just spread your yogurt in a baking pan, lined with parchment paper, in a way that is not too thick, so it won't be hard to bite through, but not too thin, that will melt too fast. I like it about ¼ inch thick.

    Then add a few teaspoons of jam and slide a skewer (spoon also works) through the jam, to create a design.

    Add sliced strawberries and sprinkle the granola around it. You can also add any other mix-ins that you'd like.

    Place in the freezer for approximately 4 hours, or until frozen.

    Once frozen, remove bark from baking pan and break it into smaller pieces. Use your hands for a more rustic effect, or cut it into squares with a knife, if you prefer.

    Frozen Yogurt Bark

    Ingredients

    • 1 ½ cup Greek yogurt (vanilla flavored) (or add about 2 tablespoon honey if it's plain)
    • 6 teaspoon mixed berry jam (or other flavor of choice)
    • 3-5 Strawberries (cut in half if they're small or in thirds if they're big)
    • ¼ cup granola

    Instructions

    • Line a 8.5 x 8.5 baking pan with parchment paper.
