Yogurt Bark is the perfect healthy snack, specially for hot days. Loaded with protein, fruits and whatever your imagination may come up with, frozen yogurt bark is a fun nutritious treat for kids and adults.

1 ½cupGreek yogurt (vanilla flavored)(or add about 2 tablespoon honey if it's plain)
6teaspoonmixed berry jam(or other flavor of choice)
3-5Strawberries(cut in half if they're small or in thirds if they're big)
Line a 8.5 x 8.5 baking pan with parchment paper.
Spread yogurt evenly inside the pan, in a way that is not too thick, so it won't be hard to bite through, but not too thin, that will melt too fast. I like it about ¼ inch thick.
Drop about 6 teaspoons of jam on yogurt and slide a skewer (spoon also works) through the jam, to create a design.
Add sliced strawberries and sprinkle granola around it. You can also add any other mix-ins that you'd like.
Place it in the freezer for approximately 4 hours, or until frozen.
Remove bark from baking pan and break it into smaller pieces. Use your hands for a more rustic effect, or cut it into squares with a knife, if you prefer.
Keep barks in a freezer-friendly container or bag.
You can use Greek or regular yogurt, but Greek is the best choice since it contains less water and it's creamier. Regular yogurt and specially 0% fat yogurt will be harder and icier…I like using plain Greek yogurt and sweetening it with about 2 tablespoon of honey.Fruits: For this recipe I used fresh strawberries, but you can also use frozen (it is not necessary to defrost it). You can also use other fruits like blueberries, peach, banana, avocado, pineapple … Cut into little pieces/thin slices to make it easy to bite into.Jam: I used mixed berry jam, but you can use any other flavor of your choice. Try to think of one that would go well with the fruit you chose.
