Easy Mango Salsa Recipe

A Mango Salsa recipe that is full of fresh flavors. You can eat it with fish, chicken or really anything… It’s a healthy addition to any meal.

Don’t you love summer?! I mean…What’s not to love?? Blue skies, sun, vacation and fresh food! Oh yes, I love summer! But something I don’t like is spending too much time in the kitchen, since I could be having fun with my kids and cooling off a bit (believe me, summer in Tucson is really HOT!!!).

So, since I’m in ‘vacation mode’ during summer, I thought that making this super fresh mango salsa to eat with my tortilla, would be just the right thing to do.

I don’t know about you, but I just love the simplicity and versatility of salsa. You can make so many combinations, and the dressing is so simple that is hard to go wrong.

So easy that all you need to do is chop and mix

It is summer and it’s so easy to find mangoes right now. At this time of the year they are so sweet!! Although I have to say that mangoes in Brazil are much sweeter than the ones I’ve found here in U.S. They are so sweet and so juicy that the juice just runs down your arms (sweet memories :)). But, anyways, they are still delicious here, and perfect for making a salsa!

Basically what you have to do is cut some mangoes, cucumber, shallot, and cilantro. Add some olive oil, lemon juice and salt, and you’re ready to eat!

You can eat it with chips, tortillas, tacos, rice, fish… I mean, you’re the boss. As for me, I just made my simple chicken breast, cut it into slices and added it to my tortilla, along with the salsa. It was perfect!!

This recipe calls for diced cucumber, but in my house, for example, my boys just eat sliced cucumbers, not diced (I know, it can be annoying sometimes). So feel free to adapt it to your liking.

Mango Salsa

A super tasty Mango Salsa that is full of flavor and freshness. A healthy addition to any meal.

Ingredients

  • 2 mangoes (diced)
  • 1 small cucumber (diced)
  • 1/2 shallot (minced)
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp lemon juice
  • salt (about 2 pinches of kosher salt)
  • 1 handful cilantro (chopped)

Instructions

  • First, chop mangoes, cucumber, shallot and cilantro. Add it to a bowl.
    Next combine the olive oil, lemon juice and salt and pour it over the chopped ingredients.
    Toss everything and taste. Correct it with more salt, oil or juice, according to your taste.
    Enjoy!
