Peach Feta Salad
Ingredients
For the salad
- 5 oz Spring mix salad blend (baby lettuce and baby greens) 140 grams
- 1 big ripe peach sliced
- ½ cup blueberries 100 grams
- ½ cup honey roasted cashews 80 grams
- ⅓ of a medium cucumber sliced
- 2 tablespoons feta cheese
For the dressing
- 1 large mango (about 1½ cup cubed mango)
- ⅓ cup water
- ¼ cup avocado oil
- ¼ cup orange juice
- 3 tablespoons freshly squeezed lime juice
- 1 tablespoon rice vinegar (can be subbed for lime juice)
- 1 garlic clove
- ½ small shallot (about 1½ inch piece)
- 1-2 tablespoons honey or agave nectar (depending on the sweetness of the mango)
- ½ teaspoon salt
- red pepper flakes, to taste
Instructions
For the salad
- Place the mixed leaves in a bowl and drizzle with the dressing. Toss it to coat all leaves evenly.
